The antioxidants (polyphenols) in banana leaf is reported to help fight cancer. Banana leaves are also used in some Ayurvedic medicinal preparations. By serving hot food on a banana leaf, one could get a lot of that good stuff although the leaf is hard to digest for a human when eaten as-is. It is hygienic. Finally, we love to follow the ways of our ancestors (especially when they are right). It is nice to have a bit of history and culture when you are dealing with something as fundamental as food.

The Madras Canteen is all about the tradition and culture prevalent in the South of India. The canteen concept is a working man’s meal and is about the joy of togetherness, having a comfort meal – where all the dishes are served on a banana leaf and the idea is to mix all the flavours together as a working-class man would do or have them separately as per your choice. Madras is a spice-rich region – the food is full of rich spices and flavours and we are big fans of this cuisine.,The Madras Canteen serves the food on a banana leaf as this the way of our ancestors( especially when they are right) It is nice to have a bit of history and culture when you are dealing with something as fundamental as food.

Sandeep Sachar

Restaurateur and Entrepreneur. A hotel management graduate with 5-star experience across the globe, Sandeep moved to Singapore in 2007 and worked with a chain of fine dining restaurants. Sandeep’s passion for Indian cuisine and commitment to guest service was instrumental in the conceptualisation of the Curry Culture, a destination point for authentic Indian cuisine at a great value for money.

Jimmy Mathew

The man with the golden heart, Jimmy is the architect of the Curry Culture dining experience, where the word “no” is never mentioned to the guest. A consummate professional, who sets high standards for himself and his team, Jimmy’s experience of managing restaurants ranges from Indian, Italian, Mongolian and so on. His knowledge of wines, food and flair and commitment towards his guests and team has truly shaped the Curry Culture work ethos and dining experience.
